POLLEN STREET SOCIAL

Après cinq ans au Maze en tant que Executive Chef, Jason Atherton décide de se lancer dans un projet ambitieux : démissionner et ouvrir son propre restaurant. C'est comme ça que le très réputé Pollen Street Social a vu le jour. Le nom  résume bien l'esprit du lieu : Pollen street car autrement les clients auraient eu du mal à trouver ce restaurant magnifique, social car il a été conçu comme un lieu de rencontre.

Huit chapitres racontent l'âme de ce restaurant à travers ces recettes :

canapés (fairy cakes with pickeled cucumber and dill & spinach cream, new forest mushroom tea with parmesan foam and cep powder)

starters (saddle of rabbit with crispy rabbit leg croquettes mixed beans bitter leaves and truffle dressing, braised broccoli with broccoli purée seaweedpowder and toasted almonds)
